Unlike length or mass conversions, temperature requires both a scale factor and an offset, because 0°C and 0°F are different temperatures. This also means temperature differences convert differently from temperature values: a rise of 10°C is a rise of 18°F, not 50°F.

The mental shortcut: double the Celsius and add 30. It is accurate within about 3 degrees between 0°C and 30°C, which covers nearly all weather.

Why do the scales differ at all?

Defined by the freezing (0°) and boiling (100°) points of water at standard pressure. Used for weather everywhere except the United States.

−40 is the one temperature where the two scales agree, which is a consequence of their different scale factors and offsets intersecting at that point.
